We've got a decent amount of leftovers in the fridge thanks to all the cooking! I made crêpes tonight and stuffed them with the savory filling left from the cheesy pumpkin pasties I made last week. And then we obviously needed dessert crêpes, too, so I found a recipe to use up leftover ricotta.
I used a recipe from a cookbook this time because it went with the ricotta filling, but I usually make the Smitten Kitchen foolproof crêpes because they're way easier and just as tasty.
Crêpes just feel fancy, even though they're super easy. If you're going to eat leftovers, you may as well feel fancy!
