Cauliflower cheese isn't too well known stateside: It hails from the U.K., and more of us should import it. When I pulled a golden, bubbling pan of cauliflower smothered in rich Irish cheddar sauce out of my oven today, this dreary, rainy day suddenly felt warm and cozy.
Apparently I only took extreme close-ups, but you get the picture.
My mistake today was not measuring out how much cauliflower I got out of the head I bought. There was wayyyyy too much sauce and not enough cauliflower. I didn't really think "too much cheese sauce" could be an issue, but alas, it was a bit much.
We still ate the entire pan, in any case.
