Lunch today was nachos made with the shredded pork from last night, as well as salsa, shredded cheese, and a lil sprinkle of greens to make me feel better for having nachos for lunch.
An artfully placed LaCroix always makes me feel virtuous, too.
If I ever have just a bit of meat left from dinner, I like to add it to nachos or quesadillas (depending what it is). I packed the same thing for Joe so he could assemble a plate and microwave it at work. Makes me wonder why I haven't thought of packed lunch nachos before.
