Remember how I resisted the temptation to drown my cauliflower cheese in all the cheese sauce last week?
The leftover sauce came in handy today. I sautéed some onions with garlic powder, then dumped in black beans, canellini beans, and canned diced tomatoes. In went the leftover sauce and cooked elbow noodles with a bit of pasta water. And then, obviously, a healthy handful of shredded cheddar. Kosher salt, chili powder, done, yum.
