Recipe Review: Carrot Pancakes with Salted Yogurt
Do you ever scroll down to read reviews on a recipe and see people complaining about the final result after admitting they made weird substitutions or left out key ingredients? "I was out of cocoa powder so I used instant coffee to make these brownies instead and they turned out AWFUL, no stars." (If not... well, first of all, you should always check out reviews for helpful tips and warnings, especially on sites like Allrecipes where the recipes are written by home cooks. )
Anyway, that's what I'm about to do. Except I liked the recipe (Carrot Pancakes with Salted Yogurt from Bon Appetit), so I think it's fair game. I'm pretty sure if you follow all the steps, they'd be even better, but they are yummy even if you slack!
I didn't use cilantro and didn't serve mine over greens tossed with lemon, though that sounds delicious. We just didn't have any. I also used regular flour instead of chickpea flour. I have never heard of flaky Maldon sea salt, sorry.
They came out great and were the perfect veggie-filled dinner after our trip to Chicago (which always means eating everything)! I'll definitely make them again. Maybe even correctly next time.
