Recipe Review: Super Fresh Cucumber Salad

When it's 90 degrees out, I prefer to leave the oven off. Ideally, this would mean ice cream sundaes for dinner, but second best (sigh) is a nice fresh salad. This super fresh cucumber salad from Budget Bytes was refreshing and flavorful.


Because we ate this as a dinner salad and not a side dish, I added chickpeas. They bulked the salad out nicely! Adding beans is one of my tricks whenever a recipe feels like it might not be hearty enough. Grilled chicken would be yummy on top, too... but beans are cheaper, and they kept the whole thing light and easy.
